We all know how crazy weekday mornings can get. Breakfast, more often than not, falls prey to our mad hectic work schedules. Though its one of the most important meals of the day, we don’t think twice about dropping it in the mad rush to start the day.
So we got a mix of professionals-on-the-go and a food blogger to dish up some simple breakfast items that you can whip up in under 15 minutes. Simple, yet, healthy these food items will keep you satiated till lunch hour.
Tangerine And Basil Seed Pancakes

Makes 8 pancakes
Dry Indgredients
1 cup all-purpose flour
4 tablespoons whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
2 tablespoons granulated sugar
1 tablespoon tangerine zest
1 tablespoon basil seeds (to be folded into the batter)
Wet Ingredients
1 cup milk
2 teaspoons vanilla extract
2 tablespoons extra virgin olive oil
1 tablespoon tangerine juice
Maple syrup / Honey to be drizzled on the pancakes
Method
1. Mix all the ‘wet ingredients’ together in a bowl and stir them together with a fork or balloon whisk. Set aside.
2. In a separate bowl stir together the first five ‘dry ingredients’, that is, all purpose flour, whole wheat flour, baking powder, baking soda and salt.
3. All at once, add the wet ingredients to the dry ingredients and stir them together to combine. Fold in the basil seeds and allow the batter to rest for a few minutes.
4. In the meantime, heat a non-stick pan over medium heat and coat it with oil or butter. Use the 1/4 cup measuring cup to dollop the batter on to the pan.
5. Cook until bubbles form on top and the bottom turns brown, then flip to cook the other side. Follow this for the rest of the batter.
6. Drizzle generously with maple syrup or honey before serving.
Mushroom Spinach on Toast

Serves 2
Ingredients
2 cups of washed, boiled and chopped spinach
1/2 cup boiled corn
1 packet or 1 cup sliced mushrooms
1 sliced onion
2-3 cloves
chopped garlic
1 teaspoon olive oil
1 teaspoon butter
1/4 cup grated cheese
1/2 teaspoon oregano
1/2 teaspoon chilly flakes
1/2 teaspoon grounded black pepper
1/2 teaspoon sugar
1 or 2 chopped green chillies
Salt to taste
Method
Heat oil and butter in a pan, add chopped garlic, saute for few seconds.
Add sliced onion, green chillies, salt and sugar and saute till slight brown.
Now add sliced mushrooms and saute till all the water evaporates and mushrooms turn brown.
After that add all the spices and chopped spinach and corn and saute till the water content evaporates.
Add grated cheese and stir for one or two minutes. And then, its ready!
Cool and spread one or two spoon full of this mixture on a slice of bread and toast it on a pan.
Serve hot.
Egg in a Hole

Serves 1
Ingredients
Either a 1-inch thick slice of bread, or 2 slices of bread
Small cube of mozzarella cheese or any cheese of your choice
Oil to coat the bottom of the pan
1 egg
Salt and pepper to taste
Method
1. If using 2 slices of bread, take 1 slice and grate some cheese over it. Cover it with the other slice and cut a hole in the centre using a cookie-cutter that’s at least 2-inches wide.
2. Pour the oil in a frying pan and spread it around to coat the pan. Keep the flame on medium-low and place the sandwiched bread which has the hole, in the frying pan.
3. Now crack the egg in the hole that’s been cut out in the centre and let it cook as the bread crisps up from the bottom.
4. Once the egg firms up a bit, slide the bread around the pan so that it cooks in the oil that’s in the pan.
5. Place the sandwiched cut-out circles (with cheese between them) also in the pan and let them toast on both sides.
6. Serve when the egg has cooked completely.

Moong Dal Chillas

Ingredients
1 cup green chhilke wali moong dal
2 green chillies
1 piece of ginger (1 inch)
Salt to taste
1 tsp Ani seed (sauf)
1/4 cup of fresh coriander leaves
2 tsp of pavbhaji masala
Grated cheese
Method
1. Soak 1 cup of moong dal in 4 cups of water for 4-5 hours or overnight.
2. Drain the water and grind it along with the green chillies, ginger, sauf and fresh coriander leaves in a mixer. Grind it coarsely, you may add a little water if needed.
3. Heat a pan, add few drops of oil and spread the batter with a ladle, like a pan cake.
4. You may now sprinkle some grated cheese and 1/4 teaspoon of pavbhaji masala over it.
5. Flip over when crisp and when both the sides are crisp (light brown), take it off the pan and serve hot with tomato ketchup/green chutney.
