Chunky Mexican Salsa
Prep time: 20 minutes
Serves: 1 medium bowl full
Method
1. In a non-stick pan, heat oil till it starts to smoke. Add onion and garlic and fry till it starts to turn brown. Add chopped tomatoes, coriander, green chilies and cook for 2 minutes on medium heat till tomatoes become squishy.
2. Add seasoning to your taste and 2 tablespoons of water and cook for a minute. Press down the tough tomatoes while stirring so that they squish out a little.
3. Add tomato puree, jalapenos and cheese and give it a nice stir. Cook on high heat for another 30 seconds till the sauce comes together. Remove on to a bowl and serve warm or cold with crunchy nacho chips or a salted cracker!
Sour Cream and Onion Dip
Prep time: 20 minutes
Serves: 1 medium bowl full
Method
1. In a bowl, mix all the ingredients together till smooth. Add seasoning and give a final stir.
2. Serve chilled with chips or fingers of carrot or cucumber!
