And one sweet dish that you must try when you’re here is the malpua. This puri-shaped, flour-based preparation is fried in ghee and then dipped in sugar syrup to give you the ultimate sugar high. Team it with rabri and you’re likely to forget the world around you as you relish every bite of it.

Ingredients

Sugar: 1 cup
Semolina: 1 cup
Refined flour: 1 cup
Salt: 2 pinches
Milk: 2 cups
Oil for frying
Cardamom seeds: ½ tsp

Method

Mix sugar in milk. Add flour, semolina and salt in this batter and ensure that there are no lumps. Add cardamom seeds. Mix well. Heat ghee in a thick bottomed pan. After it gets heated, pour the mixture with a spoon so that round shaped pan cakes are formed. Cook malpuas till the color changes to golden brown. Serve hot.

Tip: putting some saffron sugar syrup on the malpuas makes them even tastier and if you are looking for an innovative way to serve them. Rabri is best paired with malpuas.
