The good thing about Mexican food is that you’re trying something that’s familiar to the Indian palate and yet it’s different. Taco Bell organised Global Insiders’ Forum 2019 recently where they showcased some new dishes they are launching in markets all over the world.

The Mexican Gordita launched in India in the beginning of August and we got the head chef of Taco Bell (Asia) to tell us how they put together a scrumptious Kickin’ Gordita.

“We have a very intensive process and we work very closely with our marketing team. They tell us what customers are looking for and what’s working well. What we also do is look at our US pantry because our US kitchen is known for their innovation. We pick ideas from them and adapt them according to our region. From ideation to the actual launch, the journey can be as long as 18 months,” says Ankit.

The next product that will launch at Taco Bell in India soon is a new version of the Naked Chicken Taco. The team looks at social media channels to understand what’s missing in a market and catch up on trends.

Ankit says, “When we launched Naked Chicken Taco in India last year, people were surprised to see a taco in that style. So we thought let’s take it to the next level. And that’s why we got a hot and fiery shell which is basically a red coloured shell. It makes it very attractive and Instagram-friendly and then it has a filling of Mexican slaw which makes it a combination of hot and cool. The reason we thought of this was because we realised people see food through their lens first and it must look hot and fiery.”
